lau na sathi ho ani one knows how to make chukauni???

I bet you must be from Butwal,Tansen,Gulmi or nearby:


1) Boil potatoes.


2)Add  Plain yogurt and stir pretty well with (1) in a bowl.


3) Cut  onions and leaf-onions(long) to the  bowl.


4) Put oil,Methi ,turmuric in pan  and fry pretty well.


5) Dip that to Bowl and add Salt.


You are done. As day goes by, it tastes more good.

Thanks. Add Green Chilies as well in pan while you fry oil and other stuff.

Chukauni question reminded me of my tour to Butwal this year.....

After 3 hours drive from Synajha... we reach place where the road seperates  into two direction one to Butwal... another to Kali Gandaki

We stopped at that place and went to a small shop by the side of highway.... and the guy at the shop said he got "chukauni" and roti for lunch.... as we are from another part of country we didnt knew was chukauni was.... It ooked like yoghurt mixed with some potatoes.....  I promptly though about "Raita".... my wife was quite reluctant to tatse it....

It turned out to be a nice dish not known to us... we finished all his stock as we are quite a bunch......
from that day we make chukauni quite regularly.....

Alnebali,


My mom's from palpa, she makes chukauni all the time.


2 key ingredients are missing from the recipes above...


Garlic paste, and timmoor powder.


I usually add salt, red pepper, garlic paste and timmoor to the yogurt and mix well, then add boiled potatoes and onions, then "jhano" with dry chili, besaar and methi.


Chukauni + poleko sel roti = heaven.

Don't know about chuk, it was never in the recipe at our house. Maybe you could try it out and let us know how that goes.

चुकाउनी बनाउने साधारण तरिका

- आलु उसिन्नुहोस्,  उसिनेको आलुलाई इच्छा अनुसार काट्नुहोस् (सामान्य साइजमा)
- अर्को भांडामा दही (पानी हालेर अली अली पातलो बनाएको)राख्नुहोस्
-  दहिमा नुन, काटेको प्याज (नपकाएको, काँचो प्याज), लसुन, अदुवा हाल्नुहोस्
-  आलु+ दही राम्रोसँग मोल्नुहोस्
- त्यस्लाई मेथी, बेसार ले झान्नुहोस्
- अनी हरियो धनीया माथि बाट छर्किनुहोस्

तयार भयो स्पेशल चुकाउनी

yaa,
one thing everybody forgot to mentoin that is never put hot oil directly on dhai....tato teel le dhai phatna sakcha.
so always add dhai la last.

When I was kid...I used to study in Tamnagar, Butwal. During the weekend time, my aunt used to take me to mela and haat bazaar. I used to eat the food and the only thing I could remember is the potato, curd and the onions and the delicious taste of it. I am from kathmandu and nobody knew about it there. So I was thinking of it all the time. But today.....thanks to all the frens here in sajha who helped to remind me the wonderful food of my childhood called "CHUKAUNI".
