you should put all employment history (but put only legitimate employment, don't put if u worked illegally in the past). As of W2 requirement,  USCIS doesn't  ask for W2 from all employers. USCIS needs only the latest W2 (like that of 2010 if u r filing AOS this year).

Ark is right. some latest W2 only as a proof. But you should send them all your tax return docs.

I was the primary candidate and i showed the experience of Nepal too since that was within 5 yrs period of employment. As I already said no need of W2s (except the latest one), but provide employment within that of 5 years. If you were unemployed in any year within last 5 year, put unemployed for that time frame. Datewise, make sure u cover the last 5 years whether employed or umemployed. 

By the way, aren't u or ur company hiring the lawyer to file? If you are, the lawyer will ask whaever he needs. if no lawyer, then go with it.
