Yea....around 500 should be enough. Nothing against parents, but you have to put cap on how much to send. Nepal is society which demands more and more, when there is easy money. So I would recommend to only send how much they need and maintain some for emergency here and send when actually needed I would recommend against sending extras for siblings, just for parents.

since you are the only one they can count on , make sure they always have at least 20-30k cash and couple of lakhs in bank for any emergency, if they already don't have. This is on top of what you send for monthly expense.

It depends how much is their expenditure. Agree with @ meraj and gaulejetho; only send what is needed. Also recommend Against sending extras to siblings/other family members. Send only for your parents expense. Easy money has no value. Many people in Nepal don't understand how hard it is to earn and what you are going through here to earn that money; they feel it grows just like that in Amrika; the more you send -the more the expectation.
