I don't think there is a relationship between OPT/CPT and Greencard.
The reason why people afraid to apply greencard with OPT/CPT is that those work authorizations are limited. If you are applying for EB2 then you need have to have work authorization valid at least for 3 years otherwise you will be out of status as EB2 entire process(PW till 485 approval) is taking longer these days.
You can even apply for H1b and GC at the same time and if your both GC/H1b approved then you need to let your company know under which work authorization you want to work.
Yes it's possible that you keep on working on H1b even if you have GC.
It will become even more complicated if you applied 485/140 and also F1 (just in case to be in safe side). In that case your F1 will be denied because F1 is non immigrant visa and you have already seeking for immigrant visa(GC). However H1b is not Dual intent visa(Immigrant/nonimmigrant). If you are in H1b then you can apply for GC or F1 both with no issue.
